Wet Ingredients
- 1 cup boiling water
- 1/2 cup rolled oats
- 1/6 cup honey
- 1 tablespoons butter (or ghee)
- 1 teaspoons salt
Dry Ingredients
- 1/2 package active dry yeast (4g)
- 1/4 cup warm water (110°F/43°C)
- 1 large egg
- 2 1/2 cups spelt flour (Or mutil-grain flour)
Optional Ingredients
- 1 tablespoons honey, slightly warmed (for brushing)
- 1 tablespoons rolled oats (for sprinkling)
- Combine wet ingredients togather and set aside. (called oat mixture)
- Dissolve yeast in warm water and let stand about 10 minutes. (called yeast mixture)
- Pour the yeast mixture + oat mixture, and then <--- mix egg, <--- mix flour, <--- mix all until dough is smooth and elastic (if too sticky, add more flour, 1 tbsp at a time).
Let the dough grows twice. Preheat oven to 375°F (190°C)@ 30 mins (or until the top of each loaf is golden brown and the bottom sounds hollow when tapped.).
- Lightly oil a large bowl and add dough, turning to coat with oil. Cover with a damp cloth and set aside to rise in a warm place until dough doubles in volume, about 1 hour.
- Punch down dough, then on a lightly floured surface, divide dough into 2 equal pieces and form into loaves. Place loaves into 2 lightly oiled loaf pans (or use baking paper). Cover with a damp cloth and let rise again until doubled in volume, about 40 minutes.
- bake 375°F (190°C)@ 30 mins or until the top of each loaf is golden brown.
- Remove loaves from pans after cool down.
- Brush tops with honey, and sprinkle with oats after remove loaves from pans.
