Recipe: Orange Yogurt Ice Pops

Orange Yogurt Ice Pops

1 cup (250 mL) thawed, pulp-free orange juice concentrate
1/3 cup (80 mL) granulated sugar
2 cups (500 mL) plain yogurt (preferably full-fat)
2 tsp (10 mL) pure vanilla extract
 
In small saucepan, combine orange juice and sugar over medium-low heat. Cook, stirring, until sguar dissolves, for about 3 minutes. Whisk in yogurt and vanilla.
Transfer to large liquid measuring cup. Pour mixture into molds, leaving 1/4-inch (4-mm) for ice expansion. Freeze for 2 hours. Insert popsicle sticks. (Mixture should be frozen enough that stick will stand.) Freeze until firm, about 5 to 8 hours.
To eat, dip bottoms of molds into bowl of hot water (could take 5 to 30 seconds) to loosen. Remove pops from molds. (You can wrap in plastic or pop into freezer bags and eat within 3 weeks.)
Makes about 3 cups (750 mL) for about eight, 3-oz (90-g) ice pops.
